Ingredients :
1 lb / 450 g shelled fresh or frozen shrimps
2 tbsp vegetable oil
1 medium onion, chopped finely
2 cloves garlic, chopped finely
2 candlenuts, grated
1 tsp coriander
1/2 tsp pinch of cumin
1 tsp turmeric
1 tsp sambal oelek
1 tsp shrimp paste
1 tsp salt
1/2 tsp lemon grass
1/2 cup coconut milk from 1/2 coconut
2 bay leaves
Direction:
- Heat oil and lightly onion, garlic, grated candlenuts, coriander, cumin, turmeric, sambal ulek and shrimp paste.
- Add shrimps and lemon grass. Fry lightly.
- Add coconut milk and bring to a slow boil. Lower heat, add salam leaves and salt. Simmer uncovered for 15 to 20 minutes. Serve.
